Black Bean Soup

INGREDIENTS:

1 Onion, diced

3 minced Garlic 

1 Red Pepper, deseeded and chopped 

1 Yellow Pepper, deseeded and chopped 

1 cup of Corn 

2 15oz cans of Black Beans

2 15oz cans of Chopped Tomatoes

4 cups of Vegetable Broth 

1 Lime Juice

1/3 Cilantro, chopped 

2 teaspoons of Chili Powder 

3 teaspoons of Smoked Paprika 

2 teaspoons of Ground Cumin 

1 tablespoon of Nutritional Yeast 

Salt, Pepper

DIRECTIONS:

  1. In a pot add 1 diced onion, 3 minced garlic, 1 red pepper, 1 yellow pepper, 1 cup of corn, 2 cans of black beans, 2 cans of chopped tomatoes, 4 cups of vegetable broth, lime juice, 1/3 cup cilantro, 2 teaspoons of Chili Powder, 3 teaspoons of Smoked Paprika, 2 teaspoons of Ground Cumin ,1 tablespoon of Nutritional Yeast, salt and pepper
  2. Mix all the ingredients together and cook on high for 2 hours 
  3. Serve in a bowl with avocado slices, tortilla chips and yoghurt
