Mango Rice

Mango Rice

INGREDIENTS:

2 tablespoons Sugar

½ can Coconut Milk 

1 Mango, cubed

For the rice:

1 cup Sticky Rice

1 cup Water

½ can Coconut Milk

¼ teaspoon Salt

1 tablespoon Sugar

1 Star Anise

DIRECTIONS:

  1. In a pan add 1 cup of sticky rice and 1 cup of water
  2. Leave to soak for 30 minutes
  3. Add ½ cup of water, ½ can coconut milk, ¼ teaspoon salt, 1 tablespoon sugar and 1 star anise
  4. Bring to boil 
  5. Cover and simmer for 20-30 minutes until liquid is absorbed 
  6. Remove star anise 
  7. In another pan add 2 tablespoons of sugar an ½ can of coconut milk 
  8. Warm gently stirring to dissolve 
  9. Put to one side 
  10.  Serve sticky rice and add 1 cued mango 
  11.  Drizzle over with coconut milk and enjoy!
