Salmon Salad

INGREDIENTS:

1 Medium Boiled Egg

1 Cup Spinach

1 Cup Arugula

6 Basil leaves

3 oz slices Smoked Salmon or Lox

½ Avocado

3 T Avocado Oil

2 T Lemon Juice

1 T Mustard

DIRECTIONS:

  1. Add the avocado oil, lemon juice and mustard in a small jar.
  2. Shake until thick and emulsified.
  3. Place the spinach, arugula and basil in a bowl.
  4. Add dressing and toss to coat all the leaves.
  5. Place on a plate and top with salmon, egg and avocado.
