Stuffed Peppers

INGREDIENTS:

4 Bell Peppers, halved

2 cups Cauliflower Rice

15 oz can Mixed Beans

½ cup Vegan Cheese, shredded

1 cup Marinara sauce 

Salt, Pepper 

DIRECTIONS:

  1. Remove the seeds
  2. Microwave cauliflower rice for 2 minutes 
  3. Add mixed beans, vegan cheese, marinara sauce and season 
  4. Mix all the ingredients together 
  5. Stuff the peppers and sprinkle over with vegan cheese
  6. Bake at 350 F for 20-30 minutes
  7. Serve them with marinara sauce and enjoy!
