Sweet Potato Quesadillas

Sweet Potato Quesadillas


2 medium sized Sweet Potatoes

150 oz can of Chickpeas 

3 tablespoons hot sauce

½ cup nutritional yeast 

8 large Flour Tortillas

Salt, Pepper 


  1. Bake potatoes at 400 F for 40-50 minutes   
  2. Cut in half and scoop them out
  3. Place them in a blender with chickpeas hot sauce and nutritional yeast 
  4. Add salt and pepper 
  5. Blend to a thick puree 
  6. Place the puree into a tortilla and cover with another 
  7. Cook in a frying pan 2-3 minutes on each side 
  8. Cut into 6 pieces 
  9. Serve and enjoy!
